Preparation: Heat the plate on a low flame. Bring a saucepan of water to the boil, immerse the vine leaves in it for a minute, drain them, spread them out on a tea towel with the outside against the fabric; dry them. Cut the cheese into ten rectangles 5 cm long and 1 cm thick. Pepper the vine leaves, place a rectangle of cheese in the middle of each vine leaf, pepper. Fold the vine leaf over the cheese and wrap the packets in another leaf. Check the temperature of the plate (sprinkle it with flour: it should brown in two or three minutes). Remove the flour and lightly butter the plate, arrange the packets of cheese on it and let them cook for about ten minutes, turning them frequently. Serve immediately. Recommended wine: Franciacorta Pinot.
