Recipe first for 6 people based on Apricots.

Preparation:

Preparation: Boil the potatoes, peel them, let them cool and puree them. Mix them with the softened butter, the semolina and a pinch of salt. Add the egg and the yolks and the sifted flour and work until you obtain a smooth paste which will be left to rest for 1/2 hour. Roll out the dough to about 1/2 cm thick on a floured surface and cut out 8-10 cm squares. After placing a cube of sugar in the apricots, wrap them in the squares of dough. Boil them for about 10 minutes in salted water over low heat. Melt the rest of the butter, brown the breadcrumbs and roll the well-drained gnocchi in it. Sprinkle them with sugar and ground cinnamon.
