Recipe second for 4 people based on Salmon.
Preparation: Mix granulated sugar and sea salt on one side, sprinkle the salmon with lots of dill, then make a layer (on a large plate) of the salt-sugar mixture. Place the salmon sprinkled with the dill and cover it with the remaining mixture, let it rest for 24 hours, then remove the salmon from this mixture, rinse it, dry it and serve it cut into thin slices accompanied with mango chutney and some toasted homemade bread croutons.
