Recipe first for 4 people based on Ricotta.
Preparation: Sieve the ricotta, add the Parmesan, a little pepper and salt. Lightly brown the butter with salami and sage. Remove the sage and add the ricotta mixture. Finally, dilute with the cream and 2 tablespoons of the pasta cooking water. Drain the pasta and dress it with the prepared sauce.
