Polenta With Tannins

Recipe first for 4 people based on Tanni (turnip broccoli) - cooking method to boil.

Preparation: Dressing: cook the tanni raw (a particular quality of turnip broccoli) in a pan with oil, garlic, salt and very little water. You can add a pinch of pepper if you wish. Polenta: boil water in a cauldron, salt it and when it is about to boil pour in the cornmeal little by little so that lumps do not form; leave to cook over a high heat, stirring constantly with the special stick. The polenta is cooked when it detaches from the walls of the pot. It is then poured into small wooden scife and seasoned with raw cooked tannins with a little more oil than necessary.
