Recipe appetizers for 6 people based on Zuchinis with tomato.
Preparation: Peel 2 cloves of garlic and brown them in 2 tablespoons of oil. Remove them as soon as they are colored and add 2 anchovy fillets and a pinch of chilli pepper to the sauce. Mash the anchovies with a fork to make them melt then add the tomato pulp to the saucepan. Season the sauce with salt and let it cook over moderate heat for about 30 minutes (in the end it should be reduced and dry). While the sauce is cooking, trim and wash the courgettes then cut them in half lengthwise. Then divide them into pieces of about 8 cm each which you will dig with a digger, obtaining a kind of boat. Put them to boil in salted boiling water, draining them al dente. Let them cool down then fill them with the now ready sauce. Decorate them with an olive and serve immediately.
