Recipe first for 6 people based on Flour.
Preparation: Sift the flour with the salt in a large bowl, add the lard and mix it in with your fingertips. Arrange the mixture in a fountain. Dissolve the brewer's yeast in 15 cl of warm water. Pour the yeast into the fountain and mix vigorously with a wooden spoon. Then work with your hands until the preparation becomes soft and detaches from the walls of the container. Flour a work surface, place the dough on it and knead it until it becomes elastic and no longer sticky. Make a ball with the dough, put it in a large container and cover with cling film. Let it rise until doubled in volume. Once the leavening is over, place the dough on the floured work surface, roll it out into a large rectangle and brush it with oil. Roll up the dough from the short side, keeping the oiled side inside. Repeat the smoothing and oiling three times, then make a circle of 30-32 cm in diameter. Oil a large plate, gently arrange the circle of dough and raise the edge forming a cord all around. Brush with olive oil.
