Recipe second for 4 people based on Chicken - cooking method fried.
Preparation: The ingredients are for about 25 croquettes. Melt the butter over a low heat, add the flour and mix until it turns brown, then remove from the heat. Add salt and cook the chicken breasts on the plate and, once cold, cut them into cubes. Chop the parsley and dice the garlic, cheese and raw ham. In the food processor (or on the cutting board if you want to use the mezzaluna) put the chicken, the browned flour, a part of the cheese, the egg, the lemon juice and the paprika. Let the blades go until you get a homogeneous mixture that still contains some unminced pieces. Then add the remaining cheese, the ham, the parsley and let it go a little longer. With wet hands, make about 25 long meatballs and roll them in the breadcrumbs. Fry them in plenty of hot oil for 2-3 minutes, turning them often; let them dry on kitchen paper and serve piping hot.
