Recipe second for 4 people based on Clams with tomato.
Preparation: Wash the clams well, then put them on the fire with a little salted water and leave them there for about 10 minutes; then drain them, collecting their cooking water in a bowl. Strain this liquid through a cloth and keep it aside. Put a pan with the oil on the fire and let the chopped onion, celery and parsley dry. After a few minutes, add the clams and their cooking water to the sautéed mixture, in which you will have diluted the tomato sauce. Season with salt and pepper and flavor with a little grated nutmeg and paprika. Cover the pan and cook gently for about 20 minutes. Arrange the croutons in four earthenware bowls and pour the clams with their sauce over them, then serve piping hot.
