Recipe second for 4 people based on Cod with tomato.
Preparation: Wash the cod and steam it after having lightly salted it on the surface. Shell the peas, peel the shallot (or onion), chop it finely and brown it with a couple of tablespoons of oil. Then add a sprig of thyme and a bay leaf, sprinkle with the wine and let it evaporate over high heat, add the peeled tomatoes and shelled peas. After salting and peppering, cook for about twenty minutes over moderate heat in a covered container, allowing the sauce to reduce over a more lively heat and without a lid at the end of cooking. Peel and wash the parsley, chop it, remove the pea sauce from the heat, arrange the cod fillets on top, sprinkle with the chopped parsley and serve.
