Recipe second for 4 people based on cuttlefish - cooking method pan fried.
Preparation: Buy some very fresh cuttlefish, clean them carefully keeping the ink glands aside, wash them well under running water, then cut the larger ones into strips and leave the smaller ones whole. In a large frying pan, fry the finely chopped spring onion and the crushed garlic clove (remove it as soon as it turns colour) in plenty of oil, then add the cuttlefish. Leave to cook for 10 minutes and then add the wine. As soon as the latter has evaporated, pour the fish or vegetable broth (previously prepared) in which you have dissolved the cuttlefish ink. Add salt and pepper and cook for half an hour, then serve.
