Guitar spaghetti

Preparation: It is better if the flour is not too refined. The 'guitar', an instrument whose strings are 2 mm apart from each other, is essential for square-section spaghetti to come out. It takes about 20 minutes to prepare: mix the eggs with the flour in the classic fountain arrangement. The flour is slowly incorporated from the inside out and then the dough is worked by hand. You can add, if desired, a little water or a little milk to make it softer. Once a very homogeneous mixture is obtained, it is left under a cloth for at least 30 minutes. It is then flattened into pieces and the sheets are cut to size to be passed on the guitar and cut with the pressure of the rolling pin. They are cooked in plenty of salted water and are usually seasoned with carbonara or sausage sauce.
