Recipe second for 4 people based on Boar - cooking method oven.
Preparation: Cut the hearts in half lengthwise and wash them under running water. Eliminate the large jars by cutting the top off the half hearts, then sprinkle these with salt and pepper. Heat the oil in a saucepan, put the hearts in it and brown them over high heat until they are uniformly colored. Add the onions cut into thin rings and saute them too until they are lightly browned. Pour in the game stock, bring to the boil, season with peppercorns, thyme and cloves and continue cooking in the oven (190 degrees) with the saucepan covered, for 60-80 minutes. When finished, remove the hearts from the saucepan, cut them into slices and set them aside. Sieve the cooking liquid and collect the proceeds in a pan, then season with salt and pepper. Put the slices of heart in the gravy and heat them all together for a few seconds over a gentle heat. Melt the butter in a pan and put the figs cut in half, then put them in the oven for about 5 minutes. Serve the hearts cut into slices, together with their sauce, the figs and linguine or tagliatelle plain.
