Recipe second for 4 people based on Saint Peter fish.
Preparation: Trim the snow peas, remove the strings and flavor them in a pan with 60 g of butter. Adjust salt and pepper. Wet with a ladle of water and cook covered, over low heat, for half an hour. Meanwhile, clean the fish, removing the head and tail, removing the entrails and obtaining four fillets. Better if you have the shopkeeper do this job. Melt 40 g of butter in a saucepan, place the lightly floured fillets on top, cook over moderate heat until they have taken on a nice golden colour. Arrange snow peas and fillets on a serving plate, garnish with the fennel stalks and serve. Accompanying wines: Soave “Superiore” DOC, Montecarlo Bianco DOC, Greco Di Tufo DOC.
