Recipe first for 4 people based on Broccoli - cooking method pan fried.
Preparation: It is customary to let a few cloves of garlic suffer (in variable quantities according to the taste and resistance of each after the meal) in the olive oil in a large pan; then a large chilli pepper is added until it turns golden; only then add very fresh broccoli, season with salt to taste, pour half a glass of water and finally cover with an aluminum lid and keep over moderate heat. The broccoli will be momentarily removed before they are completely cooked and a glass of hot water from the pasta will be added to the pan. When the macaroni is cooked al dente, it will be dropped into the pan together with the broccoli and stirred frequently for a few minutes. The dish should be served hot, sprinkled with plenty of Parmesan. There is actually a variant which provides for the addition of white wine, in addition to water, when cooking the broccoli. The type of pasta, as in all poor dishes, can vary according to taste and availability (spaghetti, bucatini, linguine, etc.).
Ingredients: 500 g of macaroni-like pasta - 500 g of broccoli - extra-virgin olive oil - garlic - chilli pepper - plenty of grated Parmesan cheese
