Recipe first for 2 people based on Spring onions - cooking method pan.
Preparation: Slice the onion very finely and let it dry very slowly in a non-stick pan that can then also contain the pasta. At the same time you will have placed a saucepan on the stove in which you have melted 1/2 to a stock cube according to taste. When the onions are wilted (with the pan covered) proceed to wet them, from time to time with the water from the cube kept boiling in the meantime. When the onions are perfectly cooked and spread like a cream, pour the red wine and let it dry but not too much. Throw the short pasta (such as fusillo or similar) into the boiling water and drain when al dente. Pour into the pan with the onion cream, sprinkle with plenty of Parmesan, stir quickly over high heat and serve piping hot.
