Preparation: First prepare the béchamel with the ingredients listed above. Then go on to cook the mushrooms: clean them scrupulously and pass them under running water, dry them well, cut them into slices and sauté them in a pan with a few tablespoons of oil and the peeled and chopped onion. At the end, season with salt, add the cream (if you deem it appropriate), the parsley and the minced garlic, mix and switch off. Prepare a rather soft polenta. Then grease a pan with oil, arrange a layer of polenta, one of béchamel, sprinkle with grated Parmesan, make a layer of mushrooms and finally cover with the polenta and finish with the diced caciotta.
