Recipe second for 4 people based on European bass.
Preparation: Put the sea bass pulp on the cutting board and, with a large knife, chop it into a pulp. Also chop very finely half a shallot, peeled. Mix the 2 ingredients well in a bowl. Add a pinch of salt and a generous grind of pepper. Squeeze the lemon and mix it with all its filtered juice. Complete with a spoonful of oil and mix well. Spread 8 slices of salmon on the cutting board. Distribute the prepared mixture on them. Wrap the slices on the filling, forming 8 rolls. Arrange them on a serving plate or on individual saucers. Complete each roll with a spoonful of lumpfish roe and finally garnish with spring onion, slices of radish and parsley.
