Recipe first for 4 people based on Shallot - cooking method to boil oven.
Preparation: Place the slices of bread on the oven plate and put them in the hot oven (200 degrees) until they are lightly browned. Melt the butter in a saucepan over moderate heat, add the flour and mix with a whisk to prevent lumps from forming. Let it cook until the flour has taken on a nice golden colour, then pour a ladleful of broth over the fried mixture and season with the necessary salt, a grind of pepper and the finely chopped shallot. Once this is done, pour the rest of the broth into another saucepan and bring it to the boil, add the butter and flour mixture, stir to mix everything well and simmer over low heat for about 15 minutes. At the end, add a handful of grated Parmesan and half a spoonful of chopped parsley, transfer the preparation into a bowl, add the toasted slices of bread and serve.
