Recipe first for 6 people based on Gilt-head bream.
Preparation: Bring half a liter of water to the boil in a saucepan, add the sugar, sake and rice and cook over moderate heat with the container covered for about 15 minutes. When finished, turn off the heat and let the rice cool. In the meantime clean the fish, wash it carefully under running water, dry it and cut it into fillets. Place the latter in a deep dish and wet them with the lemon juice previously mixed with the crumbled lemongrass. Season the sea bream with the necessary salt and a generous grind of pepper and leave it to marinate in a cool place for about half an hour. After the indicated time, spread the fish fillets on the work surface, distribute a little of the prepared rice on each one, then roll them up to form rolls with the rice inside. Tie each roll with a sprig of chives, then place them in the refrigerator for an hour. Just before serving, divide each roll into two or three round slices, using a sharp knife, and serve with a fresh salad. --- ADVICE.
