Recipe second for 4 people based on White wine.
Preparation: Open the St. Jacques shells with the appropriate tool and extract the molluscs and the 'coral'; keep the concave part of the shells and dry it. Repeatedly pass the molluscs in the breadcrumbs. Chop the garlic, the basil and the parsley and put them to dry in a saucepan, with the oil, over a gentle heat; add the breaded molluscs and the 'corallo' and let them brown on all sides, stirring frequently. After about 15 minutes, pour the wine over them and let it evaporate over a moderate heat; then sprinkle them with lemon juice. When cooked, distribute the mixture into the shells and serve.
