Recipe appetizers for 10 people based on Gruyere - cooking method pan oven.
Preparation: The indicated doses are used to prepare 20 sandwiches or as many rolls. Sift the flour into a bowl, arranging it in a fountain, form a hollow in the center and put in the crumbled brewer's yeast. Wet the yeast with a warm mixture of water and milk, let it dissolve and sprinkle the pre-dough thus obtained with a little flour. Let it rise covered, in a warm place, until cracks form on the surface (it takes about 15-20 minutes). At this point add the egg and the necessary salt and work the ingredients until you obtain a smooth and homogeneous mixture. Let the dough rise until its volume has doubled. In the meantime prepare the filling: in a pan with a little butter, brown the finely chopped bacon and the onion cut into brunoise for 2-3 minutes, then leave to cool and add the diced cheese, a generous grind of pepper and the herbs. Roll out the dough into a rectangular sheet (60x30 cm) and spread the cheese filling on top, leaving the edges free along the long sides. Wet the latter with a little water, form a roll and cut it into slices about 3 cm thick. Melt the rest of the butter in a baking dish, rub the edge of each swivel so that it is lightly greased, then put them all in the bowl, slightly spaced apart, arranging them with the cut side up, and sprinkle with coarse salt. Let the swivels rise for half an hour, then cook them in the oven at 220 degrees for 25 minutes. To prepare the sandwiches, shape the dough into a cylinder, cut it into 20 equal pieces and work each of them with the palm of your hand giving it a rounded shape. Roll out each loaf with a rolling pin obtaining a disc of 10 cm in diameter. Put a little of the prepared filling in the center of each disc and close the dough around the filling, giving it the shape of a sandwich. Place all the rolls on a baking sheet, spaced apart from each other, cover them with a clean cloth and let them rise in a warm place until they have doubled in volume. Finally, brush them with beaten egg yolk, sprinkle them with coarse salt, sunflower seeds, poppy seeds or sesame seeds, and cook them in the oven as indicated for the swivels.
