Recipe second for 2 people based on Beef - cooking method pan.
Preparation: Reduce the beef fillet into thin slices, then chop it finely using a sharp knife. Finely chop the shallot, blanch it for a few moments in boiling water and mix it with the meat. Divide this into two equal parts which you will place in two special molds of 6 cm in diameter, filling them up to half the height. Mince the lobster meat, season it with salt and pepper and distribute it in the molds over the meat, then press lightly and unmold the resulting hamburgers. Heat two tablespoons of oil in a pan and brown the hamburgers on both sides over high heat for 3-4 minutes. Peel the asparagus, wash and boil them al dente in a saucepan with boiling salted water, then drain and run them under cold water to stop the cooking. Mix the rest of the olive oil, the vinegar, the finely chopped parsley and a pinch of salt in a bowl. Put the burgers on two individual hot plates together with the asparagus arranged in a fan and a few chives. Season everything with the prepared sauce, garnish with the caviar and lobster claws and serve.
