Recipe second for 4 people based on Pig.
Preparation: Prepare the lonza by making two deep cuts along its entire length: stuff one with the prunes, the other with the peeled wedges of two apples. Tie it up with kitchen twine, sprinkle it with salt and pepper and brown it in a sautéed onion and olive oil. When the meat has browned, pour the wine over it, let it evaporate over high heat and then add the broth. Cover and cook over low heat for 1 hour and a half. While it is cooking, prepare the apple sauce: peel and cut the 4 remaining apples into pieces, cook them in a little water until they can be mashed with a fork. Add the lemon zest, season with salt and mix. Serve the meat cut into rather thick slices accompanied with the applesauce.
