Pork Roll With Mediterranean Flavors

Recipe second for 4 people based on Pig with tomato.

Preparation:

Preparation: Boil the cauliflower florets in salted water, and cook the broccoli florets in salted boiling water for 2-3 minutes. Mix the cauliflower, transfer the puree into a bowl, add the eggs and the grated cheese. Salt and pepper the mixture, roughly chop the tomatoes and olives. Spread the slice of meat on a cutting board, spread it with the cauliflower mixture and arrange the broccoli, tomato and olive florets on top. Roll the meat up on itself from the longer side, then tie it like a salami with kitchen twine. Heat the oil in a saucepan with the garlic and rosemary, as soon as the garlic begins to brown, remove it, add the roll and brown it over high heat, turning it on all sides, pour over the wine and brown and cook in a container covered for 1 hour and 15 minutes, occasionally turning and basting the meat with its sauce and a little hot broth, salt and pepper halfway through cooking. Drain the meat, untie it and cut it into slices; arrange them on a serving plate and serve after having drizzled with its sauce.
