Roast Beef With Rocket

Preparation:

Preparation: Place a large number of slices of good rare roast beef on a large serving dish, sprinkle with coarsely chopped rocket, sprinkle with flakes of Parmesan, pass for a few moments under the incandescent glow of a grill on the roof of the oven, just enough for the cheese to melt, the rocket to wither slightly and the meat, protected, to remain intact and bloody. Sprinkle with nutmeg and a touch of freshly ground white pepper. The secret lies in arranging the rocket so as to protect the underlying meat from the heat; and the rocket itself must perhaps be a little moist so as not to dry too much. While the flaked cheese is the only one that has to melt and glaze everything.
