Preparation: Grate the parmesan on a sheet of greaseproof paper and put it in the microwave for 3 minutes at 600 watts. Let it cool over an overturned cup to form a basket. Sear the strips of meat in a pan with oil, rosemary and coarse salt. Wash the rocket and season it with oil, salt and pepper. Serve on top of the rags, inside the parmesan basket.
