Preparation: Cut the rabbit into even pieces, place it in a bowl and pour plenty of red wine on it, perfume everything with the bay leaves and juniper berries. Leave it to marinate in this way for 24 hours, then drain it well and carefully pass each piece in the flour. Meanwhile, in a frying pan with a non-stick base, brown the white onion in boiling oil together with the minced lard, adding, when both the onion and the lard are well browned, also the pieces of rabbit, making sure that the latter brown evenly. Season with salt and continue cooking, wetting from time to time with a little red wine from the marinade. After placing the rabbit on a heated serving plate, pass the cooking liquid through a sieve and dilute the blueberry jam in it. Then add the fresh blueberries and cook for a few minutes.
