Recipe appetizers for 4 people based on Anchovies - cooking method to boil fried.

Preparation:

Preparation: Wash 500 g of small anchovies and, after having floured them, fry them in hot oil. Then drain them on absorbent paper, salt them and place them well pressed in a bowl. Meanwhile, boil 1/2 glass of vinegar in a saucepan with 1 glass of water, 2 cloves of garlic, pepper and oregano to taste. After a few minutes, remove the liquid from the heat and pour it while still hot over the anchovies. Leave to marinate for at least 1 day and add, if desired, a sprig of chopped parsley.
