Autumn Rice Salad

Recipe first for 4 people based on Rice.

Preparation:

Preparation: Boil the rice in salted water, drain it and let it cool. Wash, dry and thinly cut the chicory, wash and cut the celery into small pieces, carefully brush the carrots under running water, dry and grate them, then cut the pumpkin into small pieces. Finally add the vegetables to the rice, seasoned with oil, lemon juice, chopped parsley and thyme and mix gently.
