Avocado Cream With Cream

Recipe first for 4 people based on Avocado - cooking method to boil.

Preparation:

Preparation: In a saucepan with the butter, gently brown the shallot for 3-4 minutes. Cut the avocado in half and remove the stone and peel. Reduce the pulp into small pieces and blend it together with the cream and the sautéed shallots. Bring the broth to a boil in a saucepan, add the avocado puree and whip everything with an immersion blender, in order to obtain a smooth and homogeneous mixture. Season the soup with salt and spices and let it cool down over very gentle heat, without letting it boil. For the garnish, peel the half avocado and cut it into thin slices. Whip the cream until stiff and mix in a pinch of salt and one of sugar. Distribute the warm cream in four cups and garnish it with a few slices of avocado and a spoonful of cream. Complete with some almond flakes and serve immediately.
