Whether this story is true or not, the classic recipe calls for chicken wings to be accompanied by celery stalks to be dipped in blue cheese sauce (a Gorgonzola-type cheese-based sauce available in supermarkets). Wash, clean and cut the celery stalks. Cut the wings into two parts at the level of the 'elbow' and remove the wing tips. Heat the oil and fry them over low heat for 8-10 minutes, turning them continuously, until they have taken on a golden colour. Pat dry on kitchen paper and cover to keep warm. In a saucepan, melt the butter and add the hot sauce; mix everything together and pour the sauce over the still hot wings. Serve accompanied by celery sticks and blue cheese sauce.
