Drunk Swordfish

Recipe second for 4 people based on Swordfish - cooking method pan.

Preparation: In a non-stick frying pan, heat the extra-virgin olive oil and when it is hot, add the fish slices that you have previously floured on both sides. Let them brown for a few minutes over low heat, turning them with a fork, add salt and pepper. After that, sprinkle them with dry sparkling wine over high heat until the alcohol has evaporated. Remove the slices from the pan and arrange them on a flat serving plate. Sprinkle everything with the thick sauce and serve immediately.
