Gianna's Anchovy Soup

Recipe first for 8 people based on Anchovies with tomato - cooking method to boil.

Preparation:

Preparation: Pour 7 tablespoons of olive oil into a large earthenware pan and sauté a little sliced onion. When the onion is almost undone, add 400 g of peeled tomatoes, 2 crushed garlic cloves, a small bay leaf, a pinch of fresh thyme, salt and pepper. Cook everything for about 8 minutes over low heat and then add 700 g of diced potatoes. Wet with 200 cl of hot water, boil for 20-25 minutes, then add the open and boned anchovies and cook for another 15 minutes; at the end add the chopped parsley. Pour the soup onto slices of toasted bread and enjoy.
