Preparation: Chop a small onion not too finely and brown it slowly in the butter in a small earthenware pan, placed on a flame arrester net. When the mince is well browned, add the herring fillets, first drip them in the milk (in which you have left them for at least 8 hours to lose the excess salt), then dry and cut into cubes. Mix them and add the crumbs of grated rye bread crumbs. Season with a little freshly ground pepper and a little nutmeg and put everything in a hot oven (220 degrees) for about 10 minutes, so that the mixture browns slightly, then serve it directly on the table. When browning the herrings, it is always a good idea to cover the surface of the pan with a sheet of silver aluminum foil, to prevent them from drying out too much in the oven.
