Preparation: Wash the carrots, boil them and sift them. Pour the puree into a pan containing two tablespoons of oil with the minced garlic, salt and pepper and simmer, stirring. Separately, open the mussels in a pan set over medium heat; remove the soft parts and transfer them to another pan, to simmer them gently with a spoonful of oil, the chopped onion, salt and pepper. At this point, toast the slices of bread slices in the oven, each cut into four squares. Spread the carrot cream on them and place a whole, well-drained mussel in the center of each square. Serve.
