Pike-perch in red wine

Recipe second for 4 people based on Zander.

Preparation:

Preparation: Clean and fillet the fish. Brown the chopped onion, shallot, celery and carrot in oil and butter. Remove the vegetables and brown the zander fillets in the cooking liquid. Deglaze with the wine and sprinkle with an equal quantity of fish stock. Season with salt and pepper and add the vegetables, continuing to cook for 30 minutes. Pass the cooking liquid to the mixer and cover the fish with it.
