Rich cod

Recipe second for 4 people based on Salted cod with tomato.

Preparation:

Preparation: Remove the skin from the already softened cod and cut it into pieces. In an earthenware saucepan, brown the garlic in 3 tablespoons of oil, add the chopped tomatoes and cook for 10 minutes. Spread a layer of cod on the bottom of the saucepan, cover with pepper fillets and tomato chunks, sprinkle with chopped onion and bay leaves, salt and pepper. Continue with cod, tomatoes, peppers, aromatic mince, salt and pepper and finish with more cod. Add salt and pepper, drizzle with oil and cook over a very low heat, covered, for about 2 and a half hours.
