Rigatoni With Taleggio

Recipe first for 5 people based on Taleggio cheese.

Preparation:

Preparation: Remove the crust from the taleggio and cut it into cubes, cut the olives and raw garlic into small pieces or slices and put everything in a large bowl (or salad bowl) together with the olive oil. While the pasta is cooking, mash the cheese, olives and garlic with a fork in the oil until you obtain a more or less homogeneous mixture. Drain the pasta when cooked and pour it over the sauce, turning it several times so that the cheese melts and season it evenly. Serve quickly on the table, possibly accompanying it with dry and fresh white wine.
