Recipe first for 4 people based on Lentils.
Preparation: Chop the onion, carrot and celery, brown them with 40 g of butter and oil, add the lentils and cook for a few minutes. Wet them with a ladle of broth and let them cook until they have almost completely absorbed the liquid. Now add the rice and continue cooking, wetting gradually with the boiling broth. Plunge the prawns into boiling water for a moment, remove them, dry them and brown them for two minutes in a pan with a knob of butter, then add them to the risotto five minutes before it is ready. At the end of cooking, remove from the heat and stir the risotto with the remaining butter.
