Recipe first for 2 people based on Courgette flowers.
Preparation: Clean the courgette flowers, wash them, dry them and cut them finely, with the parsley and the onion. Take a saucepan, pour the oil and add the prepared mince, the saffron with a little hot water, salt and pepper and cook over high heat for a few minutes. Puree the vegetables and put them in the pan. Remove the pan from the heat and add the egg to the pecorino. Drain the pasta and toss it with the prepared sauce.
