Recipe first for 6 people based on Bitter cocoa.
Preparation: Scrape the carrots, wash them and cut them into slices. Put them in a saucepan, covered with water, with the butter, sugar, salt and cook, uncovered and over a low heat, until the water has almost completely evaporated. Raise the heat and let the carrots flavor in the cooking juices, stirring gently. Soak the raisins in warm water. Chop the candied citron. Crumble the ricotta. In a bowl put the squeezed raisins, the ricotta, the citron, the sifted cocoa, the cinnamon and the sugar. Mix very well. Boil the gnocchi in salted water. Remove them with a slotted spoon and place them in a bowl. Dress them with melted butter and the ricotta and cocoa mixture.
