Preparation: Put 30 G of butter, the oil, the bacon and the sage into the mixing bowl: 3 minutes at temperature 100 speed 4. Through the hole in the lid with the blades moving at speed 6, combine the liver, veal rump, anchovies and mince: 10 seconds at speed 6, then cook 10 minutes at temperature 90 speed 2. At the end of cooking, let the mixture cool. Combine the brandy, salt, pepper, butter and cream for 1 minute on speed 3, then slowly turn to speed 9 for 20 seconds. Line a mold with transparent film, pour the mixture into it and place it in the refrigerator to firm up before serving.
