Recipe second for 4 people based on Veal - cooking method pan.
Preparation: Purge 500 g of veal lung in salted water for 3 hours and then boil it for 15 minutes in salted water. Cut it into cubes and brown it in a pan with 4 tablespoons of lard and a chopped onion. Add a spoonful of flour, a spoonful of vinegar, salt, pepper and as much water as needed to make this soup soupy. Cook for 30-40 minutes and serve hot accompanied by croutons.
