Recipe second for 4 people based on Mutton with tomato - cooking method to boil.
Preparation: Fill a bowl with wine and soak the prunes. Cut the meat into not very large pieces, collect them in a pan, cover them with cold water and when it starts to simmer, add an onion cut into very thin rings and a whole clove of garlic. Cook covered over medium heat for about an hour. Salt and pepper. In another saucepan let the butter melt, add two tablespoons of tomato puree and the well-drained stew (keep the water aside). Cook for a few minutes over high heat, then reduce the heat, add the drained plums and cook for about 20 minutes. If the stew gets too dry, wet it with the initial cooking water. Arrange it on a serving dish kept warm and serve immediately. Accompanying wines: Alto Adige Lagrein (Dunkel) DOC, Lacrima Di Morro DOC, Cirò Rosso “Superiore” DOC.
